OakMoon Aged Goat Cheeses
 
Clementine is our new natural-rind aged raw goat milk cheese, sold in 6-16 ounce sizes.  Clementine is robed in a rind of natural molds that aid in aging and enhance flavor.  The pate is smooth and rich, and melts on the tongue with a finish of limes and floral notes.
 
Sotty Clementine is a smaller cheese with a wine-washed rind.  Sotty is sometimes washed in a chardonnay, but most often washed in a merlot or syrah.  Sotty has an intreguingly mottled rind and is totally delectible with a nuanced character enhanced by careful treatment throughout the affinage, or aging.
 
Our raw milk Ambiance is a natural mold-ripened cheese wrapped in foil to protect the rind during the ripening period.  Ambiance offers creaminess under the rind and a firmer interior pate.  Ambiance is a a generously proportioned though not-so-gentle siren with a robust aroma that belies her elegant deliciousness.  This cheese won second place at the 2007 American Dairy Goat Association Convention cheese competition in the American-made International-style amateur  class!  In photo below, Ambiance is lower left.

Pricing
 
Prices for our aged cheeses will vary according to type of cheese and length of aging, or affinage, and should be in the $24-$32/lb range, sold whole or priced per ounce.  
 
Most chevres in our Fresh Specialty line are priced at $1.00 per ounce.  We have managed to hold our prices when everywhere prices were rising, and we hope to continue this in 2009.

Keep in mind that since we are a small, micro-creamery with basically one farm hand (Dwain), and one creamery worker (me), there may be times that every cheese listed is not immediately on hand. 

Our Fresh Goat Cheese Specialties

Sweet Chevre is a fresh spread offered in delicious renditions like red raspberry, apricot, orange and others at the whim of the cheesemaker.  It is sold in 5 ounce and 8 ounce sizes.  Sweet Chevre is delightful on fresh hot bread, as a topping for bagels, croissants, or English muffins, as a filling for desserts, or straight from the cup.  Look for new Mango/Ginger, Ginger/Fig, and Fuzzy Navel (orange & peach) available intermittently throughout the season!

Mountain Mediterranean is labneh-style hand-shaped balls of goat cheese seasoned with herbs, garlic and drenched in extra virgin olive oil.  Crying out for a hunk of crusty bread, this cheese is delicious on salad, accompanying roast lamb, tossed with hot pasta, or with crackers and a good red wine. Pictured in the deli cup in center of photo.  Second in the Marinated-Amateur division at the American Dairy Goat Association Convention Cheese Competition in 2007!

Our Boulette-style cheeses (hand-shaped balls of cheese)are available in several choices including Mama's Garden Herb, Black Oak (garlic and herb pate`rolled in cracked black pepper), and Red Cat, a sizzling crushed red pepper and garlic treat.

Black Oak Boulette is a little round black bear of a cheese with herbs and garlic in the pate` and rolled in cracked black pepper.  Savory and surprising in complexity, Black Oak goes very well with the beer of your choice and a chunk of crusty bread, or spread on a steak sizzling from the grill.

 Named FIRST in the American-Made International-Style amateur category in the 2007American Dairy Goat Association Convention cheese competion!  Red Oak Boulette is fashioned after a French cheese style, and is unique and dramatic.  Pictured below, it has an herbed pate` or interior of rich chevre and is rolled in sweet or smoked paprika.
